Observation (CORRECTED DURING INSPECTION): Quats in spray bottles measured over 400 ppm.

All four spray bottles were diluted during inspection and measured at 200 ppm. Ensure that quats sanitizer does not exceed 200 ppm as quats can remain on surfaces and may potentially contaminate food.

Observation: One-door under counter prep cooler (wings cooler) is broken. No foods being stored in cooler at this time.
Operator stated that cooler is to be replaced. Continue to ensure that no foods are being stored in cooler until it is removed from premises or replaced.

Comments

- Main undercounter prep cooler at 4 degrees C. Insert trays are covered when not in use.
- Walk in cooler at 3 degrees C.
- Front glass door cooler at 4 degrees C.
- Back glass door cooler at 4 degrees C.
- Dough cooler at 3 degrees C.
- Freezer at -16 degrees C.
- Temperatures recorded 3x per day. Note: ensure temperature records are kept up-to-date.
- All foods covered and stored off of the ground.
- Note: door seals on main under counter prep cooler are beginning to crack. Monitor and replace as needed to avoid accumulation of food debris.
- 3-compartment sink in use. Quats sanitizer measured at 200 ppm.
- Quats spray bottles labeled. Test strips available onsite.
- Kitchen and washroom hand sinks supplied with hot and cold running water, liquid soap, and single-use paper towels.
- Fan hood and oven clean.
- General sanitation good. No evidence of pests at time of inspection.
- Operator and at least one staff member on duty are Foodsafe certified.
