- All handsinks are adequately stocked and are available for handwashing.
- High temperature dishwasher is measured at 72C during final rinse cycle at the dish surface
- Labelled sanitizer spray bottle is available in the kitchen and front sushi bar. The concentration is measured at 200ppm chlorine residual.
NOTE: Always prepare fresh sanitizer solution before the start of the shift every day. Prepare solution by mixing one teaspoon bleach in one litre or one tablespoon bleach in one gallon of water
