Note: Meal prep done in main kitchen and served out of the cottage kitchen. Minimal food prep done in cottage kitchen. Other observations: √ Fridges ≤4°C, Freezers ≤ -18°C √ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel √ Quats sanitizer available at 200ppm √ Commercial dishwasher reached above 71C (160F). Domestic style dishwasher also present with sanitizing cycle capability though unable to test during inspection. Ecolab dishwasher stickers available on site and used to monitor domestic dishwasher temperatures. √ General sanitation and maintenance is very good √ Thermometers present √ Temperature logs maintained √ No concerns with staff hygiene noted during inspection
