Observation (CORRECTED DURING INSPECTION): One of the handwash station was lacking paper towels in the dispenser.
Corrective Action(s): Ensure that the hand wash station has adequate supply of hot and cold running water, liquid soap and single use paper towels in dispenser. Staff stocked the paper towel dispenser at the time of inspection.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings were observed in the back storage area where flour bags were stored. Facility had a pallet of damaged/torn flour bags separated for discarding.
Corrective Action(s): Ensure that facility is kept free of pests. Remove any conditions that might attract or harbour pests. Clean the mouse droppings with 1 part bleach to 9 part water solution. Discard any food products that has visible contamination from rodent droppings.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Temperature of all refrigeration units meet the regulatory requirements.
- Temperature of display coolers & walk-in cooler was maintained at 4C or less.
- Temperature of freezers was maintained at least -18C.
**Please note that thick ice build up was noted at one side of walk-in freezer in back area. Consider defrosting/service the freezer.
- Temperature logs were maintained and found up-to-date.

Hygiene and Sanitizing:
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either in original packaging or covered inside coolers.
- No bulk items were sold on site. Facility received pre-packaged food.
- Storage area was well-organized.
- Chemicals and cleaners were stored separately.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.
