- High temperature dishwasher reached 71C or above at plate level during the final rinse.
- Time tracking in practice for tempuras and onsen tamago - good.
- Bleach sanitizer in spray bottle measured at 100ppm chlorine.
Note: To ensure wiping rags are saturated with the bleach sanitizer, equip buckets of sanitizer throughout the kitchen and store the rags in the buckets when not in use.
