Comments

- Pizza kitchen is located in the back room. Operator is has not been making pizza onsite due to COVID-19; pre-made pizzas supplied by Wal-mart are heated using the pizza oven, sliced in the pizza kitchen/back room, and placed in hot-holding unit for selling pizza by-the-slice.
- Invoices available for review
- Ensure ventilation canopy is turned on when using the pizza oven.
- One pizza was held in hot-holding unit at time of inspection, with temperature measured to be at 64C.
- Accurate thermometers available. Temperature records available.
- Pizza prep cooler (only used to store a very small amount of food) measured at 4C.
- Freezers measured at -18C or colder.
- Hand sink properly supplied with hot and cold running water, liquid soap, and paper towels.
- Three-compartment sink available for manual warewashing
- Food storage practices satisfactory
- General sanitation satisfactory
- No signs of pest activity noted at time of inspection.
- Staff onsite had valid FoodSafe level 1 certificate.
