*D10 quat sanitizer measured at 150 ppm concentration, please adjust to achieve 200ppm concentration as per manufacturers instructions.
* Sticky fly strip mounted above dough mixer - relocate to a location away from food preparation area.
Wall board at prep station across from bakers table is deteriorating, please replace with a cleanable and non-absorbent material such as an FRP panel.
Uncovered fluorescent light fixture above two compartment sink, replace cover or have shatterproof sleeves on tube lights.
Replace any deteriorating ceiling tiles in kitchen area.

General observations:
Walk-in cooler <4 C. (Note: ensure all fruits stored away from raw proteins)
Prep coolers, drawer coolers under grill and salad prep cooler all <4 C.
Bar coolers were <4 C.
Walk-in freezer < -18 C.
Ice machine sanitation was good.
Hot holding of soups and gravy at 60 C or hotter.
Floor areas under shelved in dry storage area were clean. Good.
