Comments

General sanitation - satisfactory;
Handwashing stations (in the kitchen/front serving area) supplied with hot/cold running water, soap, and paper towels.
Coolers (display, walk in, prep, upright) at 4 C;
Freezers (chest) at -18C.
All cold units are equipped with working thermometers.
Low temperature dishwasher at 100 ppm;
Note: The dishwasher is blocking the kitchen corner handwashing sink.
Surface sanitizer available in white buckets with presoaked wiping cloths (Bleach).
Dry storage room - satisfactory;
Fan hood - satisfactory (Note: Next cleaning data: March, 2019);
No signs of pest activity at the time of the inspection.

Recommendation:
1. Properly clean and sanitize the vegetable cutter (Observed dry food debris on the cutter at the time of inspection;
2. Do not cover shelves and card board boxes by news paper (it can leached heavy metals); as well as do not store ready to eat food in card board boxes);
3. All food must be stored off the floor (onion bags and potato boxes);
4. Do not store any food related items/utensils behind a tap of a handwashing station;
