Overall very nice job on your renovation. Premise is granted health approval. You should cover the hole in the floor of the cabinet (access panel OK.) where the pipes enter. Dishwasher was very hot - reaching 78 degrees C at plate level as per min/max thermometer. Discussed bleach use for environmental sanitizing. You should keep some bleach water handy for cleaning - use 1 tbsp bleach per gallon of water. No sign of pests. Good. Discussed switching fridges - switching to a steel door fridge is fine so long as you have plenty of fridge space and the new fridge is designed to handle the volume and frequent use. If you want to give clients access to fridge recommend having a fridge for them outside the kitchen. Food Safety and Sanitation plans are in process. Please submit when ready. Submit society documents. This can be done via email. Fee waiver forms to be sent, filled out and returned.
