Observation (CORRECTED DURING INSPECTION): Lamb only hot held at 45-50c. Lamb was discarded.
Operator turned off brolier units at time of inspection. Operator was instructed to turn them back on
Corrective Action(s): Unit was set at maximum but was not capable of hot holding at >60c. Contact technican to repair unit. Do not use until I have conducted a follow up inspection to verify it is capable of hot holding at >60c.
Food handler must not turn off the brolier to slow down the cooking of the cone. The cone must be cooked continuously, even when slicing.
