Observation (CORRECTED DURING INSPECTION): Fruit juicer was only sanitized once at the end of the day. All food equipment that is used continuously used during the day must be properly washed and sanitized at least every 4 hours.

Observation: Fruit fly activity noted in the back cleaning area and partly in the front service area. Install fly traps to help rectify problem. Ensure fruit organic and other garbage material is removed more frequently during the day to prevent attraction of pest. Cleaning underneath sinks and front drawer areas could also be improved.

Routine inspection conducted and the following were noted.
Walk-in cooler less than 4C.
Coolers in the front service area were less than 4C.
3 compartment sink satisfactory.
Quats dispenser at 200ppm.
Hand washing station satisfactory
Hot dog on the roller was at 74C internally.
Freezer unit in mall storage area was at -18C.
High temperature dishwasher achieved a final rinse cycle of at least 71C at plate level.
