Observation (CORRECTED DURING INSPECTION): Toppings for sandwiches (sliced tomatoes, cucumbers, dairy products / cheese) stored at a temperature of 12C. The temperature of these toppings remained at 12C throughout the course of the inspection.
Corrective Action(s): Toppings (potentially hazardous foods) discarded. All potentially hazardous foods must be kept at 4C or less at all times to prevent the growth of bacteria that could cause foodborne illness.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Interior of ice machine has a buildup of mould-like residues and mildew-like residues, especially at the lip of the machine where ice is dispensed, and the sides of the machine.
Corrective Action(s): Ice machine is to be emptied. The interior is to be washed, rinsed, and sanitized in accordance with the manufacturer's directions. Employee had begun to empty the machine and commence the cleaning process at time of inspection.

Observation (CORRECTED DURING INSPECTION): Bleach spray bottle was at >>> 200 ppm.
Corrective Action(s): Only 1/2 teaspoon of bleach per litre of water is required. An excessive concentration of bleach can leave behind a chemical residual on your food contact surfaces. The spray bottle was diluted and was measured at between 100-200 ppm at time of inspection.

Corrective Action(s): Bring the operating permit to the restaurant and ensure that it is posted in an area visible to the public.

Observation: Additional cleaning needs to occur in the following areas:
- Behind and around the stand-up stainless steel refrigerator
- In the area around and behind the ice machine
- The crevice behind the hand wash station has a heavy accumulation of dust and cans
- Area underneath the sandwich display cooler needs to be cleaned
Corrective Action(s): The dust and grime in the aforementioned areas need to be removed. Ensure that a deep clean is done of the kitchen area and maintain food processing areas in good sanitary condition.

Observation (CORRECTED DURING INSPECTION): Sandwich prep cooler (top & bottom) is at an ambient temperature of 12C.
Corrective Action(s): Adjust or repair the cooler so that it can maintain a consistent temperature of 4C or less. Do not use this cooler until a follow-up inspection has been conducted to verify that it can maintain this critical limit (4C).

Comments

Routine inspection conducted of coffee house. The following was noted at time of inspection:

1. Temperatures
- Front display cooler at 2C
- Overcounter coolers at 4C or less
- Sandwich prep cooler at 12C (top) and 12C (bottom) *see violation code above*
- Freezer temperatures at -18C or less
- Coolers equipped with accurate thermometers
- No hot-holding conducted on-site at time of inspection
- Please begin monitoring coolers using a temperature log

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- High-temperature dishwasher sanitizes at a final rinse cycle of 74C at the plate (minimum: 71C at the plate or 180F at the manifold for 10s)

3. Storage Practices
- Food products are covered when not in use
- Single-use disposables stored in original packaging inside of cabinets
- Pastries protected from contamination via plastic enclosures

4. Pest Control
- No evidence of recent, visible pest activity noted at time of inspection

5. Administrative
- Operator has FoodSafe 1

NOTE: A cat walked into the facility at time of inspection and began resting on a table. The table was removed from the premise during the inspection. Operator aware that animals are not permitted in a food service establishment, except for guide dogs and service dogs.
