Observation (CORRECTED DURING INSPECTION): Gravy on site was left to "cool" overnight at room temperature.
Corrective Action(s): Product discarded at time of inspection. SAFE cooling can occur using ice wands, an ice bath (in your large sinks) and/or in shallow metal trays. Leaving product in large bins allows the centre to stay warm for extended periods of time.

Observation (CORRECTED DURING INSPECTION): 4 large bins (bungee bins) of onion gravy found on kitchen counter at 24C (room temperature), left from the previous evening
Corrective Action(s): NEVER store hazardous foods at room temperature! They are to be kept cold (4C or below) or hot 60C. Product discarded at time of inspection

Walk in cooler measured at 2C. Now in use. Curtains not yet installed

Store room/ kitchen area has been partially cleaned, with some ingredient bins covered with plastic. As containers wear out and become old, ensure they are replaced with bins that have tight fitting lids to prevent pests from feeding
Note: if pests continue to be a problem, I will require solid bins with tight fitting lids for ALL food products on site.
- North wall and South room have not been cleaned and organized as requested. These areas must be cleaned up with shelving cleaned off, unused items removed from premise, and rodent entry points assessed by your 3rd party pest control. Ensure everything is moved away from the walls for a thorough cleaning
