Observation: A few rodent droppings were observed in the hard-to-reach corner next to the under-the-counter cooler in the front area and in the hard-to-reach corner between the one door freezer and wall.

Note: It was mentioned that the pest control technician from Steritech was on-site last week for the food court and they had re-serviced the traps. A weather-strip was in place inside the door to prevent a gap. 100-200 ppm chlorine sanitizer was adequately setup inside two buckets and the 2-compartment sink.
Corrective Action(s): Clean the above noted affected areas with bleach water to remove the rodent droppings; Correct today. Monitor for signs or recent pest activity and continue to keep food and food equipment stored off the floor and covered in storage areas.

Observation: The under-the-counter cooler was noted between 5.2 to 5.5 degrees C around 11:15 AM (before the lunch rush). The fan was frozen according to the operator. Note: Sliced onions were transferred into a second cooler at or below 4 degrees C. The under-the-counter cooler contained raw produce apart from the sliced onions.
Corrective Action(s): Do not store any potentially hazardous food (e.g. sliced vegetables) into the under-the-counter cooler until it is maintained at or below 4 degrees C. Adjust/repair/re-service the cooler to 4 degrees C or less and contact the area E.H.O. to provide an update; Correct within 1 week.

Comments

Handsink and handwashing station were supplied with liquid soap, hot and cold running water, and paper towels.
Prep. cooler, upright glass door cooler, front sushi cooler, and two small drinks/crab coolers were at or below 4 degrees C (40 degrees F).
One-door freezers were -18 degrees C (0 degrees F) or less.
A refrigeration temperature log was being kept.
The operator was documenting the time that crab meat is removed from the cooler and kept at room temperature. Reminder: It was discussed that crab meat (at 4 degrees C) can only be kept at room temperature for up to 2 hours after which time it must be returned to a cooler and kept at or below 4 degrees C or immediately consumed. Crab meat held above 4 degrees C for 4 or more hours must be immediately discarded.
Hot-held sauce and rice were 60 degrees C (140 degrees F) or hotter.
Sushi rice pH was 4.2 or less. Note: Sushi rice batches are made every 4 hours throughout the day according to the operator.
100-200 ppm chlorine sanitizer was set up inside two buckets and the 2-compartment sink. Good.
Note: Person in Charge (Operator's Wife) had FOODSAFE valid until January 11, 2019.
