OBSERVATIONS
1.) Unsalted butter was stored at room temperature. Surface
temperature measured 25C and internal temperature
measured 23C. Operator stated that the butter was
kept out at room temperature for more than 4 house.
2.) Double stacking was observed in the prep cooler at
the back of house. Cheese internal temperature measured
10C.

Corrective Action(s): CORRECTIVE ACTIONS
1.Discard butter. Ensure to soften butter for less than
4 hours at room temperature.
2.) Do not store cheese and other items on top of
metal inserts. Cheese was moved on the bottom part
of the prep cooler.

Handsink station was obstructed in front of house.

Ensure handsinks are not obstructed and fully
equipped with hot and cold running water, liquid hand
soap, and paper towels at all times.

**NOTE: Operator stated that he will convert the
dump sink into handsink station. EHO added noted to file.

- 2 door upright cooler measured 4C at the back of
house (BOH).
- 2 door under the counter cooler in front of house (FOH)
measured 3C
- Prep cooler at the back of house measured 3.9 C
> Freezers : 2 upright 2 door freezers at the BOH
measured -18 C.
> Dishwasher chlorine residue on plate surface measured
50 ppm.
> 2- compartment sink QUAT sanitizer dispenser measured
200 ppm (QUATS).
> Sanitizer spray bottle measured 200 ppm. (QUATS)
> Back of house handsink and staff washroom handsink
were fully equipped with running hot and cold water,
paper towels, and liquid hand soap.
> Ice machine was in sanitary condition.
> No pest activity observed during the inspection.
> General sanitation was satisfactory.
> FOODSAFE Certified staff was available during
the inspection. Expired on Sept 2024.
> Permit posted in a conspicuous location.
