302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Sanitizer was not detected in glasswasher at final rinse. Operator did not have testing records or test strips available on site. Glassware was not being sanitized adequately between use. 12.5 ppm iodine sanitizer is required at the plate. Corrective Action(s): All reusuable dishware must be adequately be sanitized between use. This unit requires repair. Do not use this unit until it is repaired and can reached at least 12.5 ppm Iodine sanitizer at the plate. Use chemical test strips daily and log chemical levels.. Use the main working dishwasher to sanitize dishware immediately until repair can be made to the glass washer. Violation Score: 25

Comments

Premise overall is sanitary. Hot and cold water available. Dedicated hand washing sinks in use with liquid soap and paper towels. Food protected from contamination. Coolers at 4C and below. Freezers at -18C. 400 ppm Quat sanitizer in use in spray bottles. Dining area was impacted by water flood on Christmas Eve week. Area has been remediated and cleaning and sanitizing completed. Currently awaiting last of repairs. Ceiling is contained and not impacting food service area. Permit posted at bar area.
