Observation (CORRECTED DURING INSPECTION): 3-compartment sink did not have bleach prepared at the time of inspection.
Corrective Action(s): While in operation, facility must have 100ppm bleach sanitizer prepared and ready for use. 100ppm bleach sanitizer was prepared at the time of inspection. Provided manual warewashing signage for operator to post.

Observation: Mould was found on the shelving units in the walk-in cooler.
Corrective Action(s): Ensure shelving units are cleaned and sanitized on a regular basis to prevent mould growth.

Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at 3C (top and bottom).
-Chest freezer was at -25C.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer diluted to 200ppm at the time of inspection (1 tablespoon bleach per 4 liters of water). Sanitizer pail properly labelled.
-Deli slicer properly disassembled for cleaning and sanitizing.
-Records are maintained for daily temperature checks and deli slicer cleaning.
-General food storage practices satisfactory at the time of inspection (2 scoops were found inside ingredient containers - ensure scoops are stored outside containers).
-Food items properly covered and stored off the floor.
-Washroom clean and well maintained.
-No signs of pests noted at the time of inspection.
*FoodSafe Level 1 certificates issued prior to July 29, 2013 (no expiry date) expire on July 29, 2018. In order to recertify, students must either successfully complete a FoodSafe Level 1 or online refresher course (foodsafe.ca).
