- All coolers </=4C
- Ice machine is kept clean
- All freezers at </=-18C
- 3 compartment sink used for washing dishes, 200ppm Quats used.
- Sanitizing rags stored in 200ppm, changed every 2 hrs
- Hot holding unit for rice set at 71C
