Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: -Mold noted in ice machine
-Dirty wiping rags noted on counters.
Correction: -Discard all ice, clean and sanitize
-Wash rinse and store wiping rags in a bucket of sanitize

- provide bucket of sanitizer at every food prep area.
Comments

Noted issues are addressed, with exception of:

1.Walk in cooler floor- To be refinished/repaint in one month by max June 26-2023- Clean it in one week and send a picture via email by May 31-2023
2.Stairs to kitchen from front bakery- To be replaced with Tile or finish so it is smooth , non- absorbent and cleanable.-by max June 26-2023
3.weather stripping/ door sweep for walk in cooler is not sealed and will permit rodent entry to the walk in cooler- replace it

**Discussed: limited space (prep- sinks..) for bakery and kitchen to be in operation at the same time. Management will schedule the staff for bakery to work before kitchen start.

-Ensure to keep monitoring for pest activity, remind staff to clean and sanitize the whole facility before closing and upon opening all food surfaces to be sanitized again
- No left over of rice or stew for next day- all made fresh and used daily- Small batch of rice is made every day ( for every 10 order)
-Temp log sheet and sanitizer log is available but ensure to label coolers and freezers to match with log sheet #

Keep it up , revise the sanitation plan and increase frequency and intensity of cleaning /sanitation to maintain the sanitation at all time.
