Observation (CORRECTED DURING INSPECTION): Ice machine found to have heavy build up of mold/mildew and dripping onto ice in ice well.
Corrective Action(s): Discarded all ice produced on site. Operator must empty the ice machine, clean and sanitize it, before making more ice for customer consumption.

Observation (CORRECTED DURING INSPECTION): Three cooler units in the front of house unable to maintain contents <4C
-cake cooler (cakes measured 8-9C)
-tart display cooler (chocolate tart measured 8C)
-barista cooler (pre-made cold chai measured 9C)
Corrective Action(s): Cake cooler contents moved to working cooler units. Chai and tarts discarded.
Repair the units listed above ASAP.
Operator MUST start checking and recording cooler unit temperatures twice daily.

Observation (CORRECTED DURING INSPECTION): Ice machine found to have mold/mildew growth and dripping onto ice inside.
Some mold growth also noted in walk-in cooler unit fan covers.
Corrective Action(s): Discarded all ice. Ensure that the machine is serviced and cleaned/sanitized on a more frequent basis.
Clean the walk-in cooler fan covers immediately.

Observation: 2 issues:
1) Sanitizer dispenser at 3 compartment sink was dispensing sanitizer solution at 0 ppm QUATS.
2) Three coolers unable to keep contents <4C.
-cake storage/display cooler (measured 9C ambient temperature)
-tart display cooler (measured 16C ambient temperature)
-barista cooler (measured 9C ambient temperature)
Corrective Action(s): 1) Repair the sanitizer dispenser. Operator must use surface sanitizer dispenser at mop sink (200 ppm QUATS) to fill buckets and fill 3 compartment sink for manual dishwashing.
2) Service the cooler units to ensure that they are capable of maintaining contents <4C at all times.

=General sanitation was satisfactory at the time of inspection, besides violations noted above.
=No evidence of pest activity noted at the time of inspection
