Sausage @ 10C and was stored in the cooler from yesterday.
Tocino @ 9C and was stored in the cooler from the night before.

Cooking pot stored in handwashing sink. This prevents staff from washinging their hands properly and frequently.

Observation: Temperature in under the counter prep cooler across the grill was measured at 4-5C however, food stored in the cooler had temperature @9-10C.
Corrective Action(s): Ensure the cooler is in good working order to keep the food at 4C or below.
Do not store cold, potentially hazardous food until the cooler is in good working order.

Comments

Important Note: It has been observed that cooked rice is not cooling in a manner that make cooling process as fast. Information was provided to operator to follow proper cooling process for the rice.
Operator brought ice wand and split the rice into smaller portions. This helps the food to cooler from 60C to 20C under 2 hours and from 20C to 4C under 4 hours.
General Comments:
Hand washing stations are provided with hot/cold running water, liquid soap and paper towels.
There are no signs of pests in the premise. Pest management in place.
Sanitizer solution quats is @ 200 ppm
Walk in freezer is @-20C
2 door sliding fridge is @ 3C
2 door sliding vegetable fridge is @2C
Under the counter prep cooler is @ 3C.
