Observation (CORRECTED DURING INSPECTION): Prep cooler >4 deg. C: insert level contents (kimchi & garnishes) range 11 deg. C - 14 deg. C, operator advised these were just refiled. Under compartment 7 deg. C but mostly whole lettuce/zucchini. Inserts were all used up during course of inspection.
Corrective Action(s): Adjust cooler so that it is able to maintain potentially hazardous foods <=4 deg. C even through rush periods.
