Observation (CORRECTED DURING INSPECTION): Cooked foods were stored on a plastic plate in the hot holding unit. The plastic plate was preventing the food from being held at 60C or above.
Corrective Action(s): Remove the plastic plate and do not use it from now on. Date to be corrected by: Immediately

Observation (CORRECTED DURING INSPECTION): The concentration of the bleach sanitizer was too high. Chlorine test strips were bleached out (> 200 ppm) when used to measure the sanitizer.
Corrective Action(s): Discard the current bleach sanitizer and prepare a new batch. Ensure bleach sanitizer is prepared by mixing 1/2 teaspoon of bleach with 1L clean water. Date to be corrected by: Immediately
