Observation: 1) Eggs were stored on the top shelf on the cooler.
2) Scoops were stored inside ingredient containers.

Comments

-New sushi cooler was at 1C.
-Front area prep cooler was at 4C.
-Front service area upright cooler was at 4C.
-Back kitchen counter top cooler was at 4C.
-Back kitchen sliding door cooler was at 3C.
-Sushi area upright freezer was at -6C - operator stated freezer will not be used for storage of foods.
-Under counter freezer units were at -18C and -20C.
-No hot holding at the time of inspection.
-High temperature dishwasher had a final rinse of 72C on the dish surface (minimum of 71C required for sanitizing).
-Handwash stations accessible ad supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle labelled and tested at 200ppm.
-Operator has purchased a sushi machine. Sushi machine must be sanitized every 2 hours.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until December 31, 2028.
-Health Permit hand delivered. Ensure permit is posted in a visible location.
