304 - Premises not free of pests [s. 26(a)]
Observation: Drain fly infestation noted in kitchen. Significant numbers of live flies noted in back corner of kitchen, especially around grease trap. Noted flies coming out of grease trap. Light trap/bug zapper combination creating a patch of dead flies on the ground in noted area. It is likely dead flies are spreading around the kitchen and potentially contaminating food. Also noted dead flies and other insects on floor under shelves, behind equipment and in general hard to reach areas.
Corrective Action(s): Remove bug zapper from kitchen. Light traps are ok, but should be designed for food envrionments. Discuss with pest control technician and get recommendations following integrated pest management (IPM) practices.
Clean up kitchen and storage areas of all dead bugs and organic matter building up in hard to reach areas.
Target all drains for daily drain fly control activities.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Grease trap lid no longer fits properly in space provided, is rusting and is likely provided access to breeding environment for the drain flies.
Drain pipe below double dish sink is old leaking copper pipe. Biomat has formed all around this pipe and connections.
Corrective Action(s): Replace lid with proper lid with gasket that will allow tight fit to prevent flies from breeding in this space. As a temporary measure, seal the lid edge such that it is impossible for flies to access.
Replace piping in this area and clean up connections such that they are free of biomat formation and leaks.
Implement a daily cleaning procedures for all open drains, including floor drains, as a means of reducing viable breeding grounds for these bugs.
Follow up inspection required. see date noted on report.
