Observation: Commercial dishwasher has a final sanitizing rinse of about 10 - 25ppm.
Corrective Action(s): Check chemical concentration or chemical feed line and use your test strip to make sure that 50ppm is detected on the utensils after the final rinse. New fresh chlorine chemical will be used (new bottle is being purchased for tomorrow). If chlorine concentration does not reach 50ppm, manually sanitize using a 100ppm chlorine solution.

Comments

Coolers - satisfactory.
Hot holding - soup at >60C - good.
Cooling of hot soup - is being done quickly in small volumes.
Roast beef - time/temperature chart given. Keep temperature records. Operator advises that roast beef is not mechanically (needle tenderized).
Meat slicer very clean. Chlorine sanitizer is used for food contact surfaces and to sanitize meat slicer and wiping cloths.
Hand washing sinks have liquid soap and paper towels.
Commercial dishwasher has a final chlorine sanitizing rinse - see above.
No signs of pests - good.
Food Safe - level 1 certificates expire after 5 years. Operator is on site with a valid Food Safe certficate (updated 2018).
