Observation (CORRECTED DURING INSPECTION): Fried fish and deep fried hock knuckles/ribs not held at a temperature of at least 60C. The internal temperature for the fried fishes were at 39C and internal temperature for the fried hog knuckles were at 42C. Do not use liner for the steam table as this will prevent the food from being kept at 60C or greater.

Observation (CORRECTED DURING INSPECTION): Dishware, utensils, and equipment in the low temperature were not properly washed and sanitized as the unit was not in good working order. Operator is to only use single use items for the remainder of the lunch service until the dishwasher is repaired.

Observation: A new salad buffet table and hand washing station was installed by the steam table. Operator must obtain health approval prior to making any alternations to the premises.

Observation: Rice scoop stored in a stagnant container of water. This practice promotes the growth of bacteria and is not acceptable. Stored the rice scoop in a container of ice.

304 - Premises not free of pests [s. 26(a)]
Observation: Trace of cockroach activity noted in the dry storage and dish washing area. Pest company report dated Feb 2, 18 for the treatment of cockroach problem available. As mentioned on previous inspection reports, operator is to submit monthly pest records to the health department. No pest records have been sent to the health department since November 2017.

If the cockroach cannot be rectify by "normal" treatment procedures, full fumigation may be required.

New baseboards have been installed in the dry storage, dish pit, and grill area. Glue board also in place for monitoring cockroach activity.

Observation: Low temperature dishwasher is not in good working order as the sanitizer and detergent containers are not available. Operator is to repair the dishwasher immediately. The machine must be able to dispense detergent and 100ppm of chlorine.
Until the dishwasher is repaired, operator is to provide take out service with single use items only.

Vegetable produce cooler at 4C.
Sliding meat cooler and cooked foods cooler less than 4C.
Hand washing stations satisfactory.
Food items were properly covered and stored at least 6 inches off the ground.
