Observation (CORRECTED DURING INSPECTION): A plastic bucket with water and peas were observed in the sink at 27.5C. Staff informed that the peas had been soaking in hot water since last night to soften the peas.
Corrective action: The staff member discarded the peas during inspection. Ensure to follow the approved process for soaking peas by the district EHO, once the it is aproved.
Health rationale: cold potentially hazardous food must be stored at or below 4C to prevent food kept at the danger zone of 4C - 60C, where pathogens may grow and/or produce toxins.

Observation (CORRECTED DURING INSPECTION): The ice machine was observed to have mold/mildew on the inside (plastic tray).
Corrective action: Staff member initiated the cleaning and sanitizing process (Discard ice and clean and sanitize the inside). Ensure to regularly clean and sanitize the machine.
Health rationale: Equipment must be properly cleaned and sanitized to prevent possible contamination of food which may lead to a potential food borne illness.

304 - Premises not free of pests [s. 26(a)]
Observation: Fruit flies were observed throughout the facility. Staff informed that pest program is in place on a weekly basis.
Corrective action: 1. Clean and sanitize food contact surfaces frequently. 2. Contact pest control company and follow the recommendation provided to mitigate the issue. Ensure to monitor the fruit fly activity and keep the back door closed fully when not used.
Health rationale: Fruit flies may contaminate food.

Comments

Routine inspection was conducted. The following was observed.

1. Temperatures
All coolers (walk-in, under counter prep cooler, prep cooler inserts, beverage coolers) were at less than 4C.
Walk-in freezer at below -18C.
Hot held food at greater than 60C.
Temperature logs are maintained and up to date.
Cold-holding units are equipped with accurate thermometers.
Fish are thawed under cold running water and placed in walk-in cooler within 2 hours.

2. Sanitation
All handwashing stations are accessible and equipped with hot and cold running water, liquid soap and paper towels.
3 compartment sinks with drain plugs available.
Low temperature dishwasher detected 100ppm chlorine.
Sinks & surface cleaner sanitizer was measured within range (DDBSA 272ppm - 700ppm; lactic acid 704 ppm - 1875ppm) per test strips in spray bottles and pails.
Stored dicers were maintained in a sanitary condition.
In use potato peeler and dicer cleaned and sanitized after use or within 4 hours.
Ventilation canopy maintained in a sanitary condition.
Overall sanitation was satisfactory.

3. Storage
All foods are stored above ground at least 6 inches.
Food items are covered and labeled.
Food stored in pest proof containers with scoops stored in a sanitary manner.
Single-use containers are covered and stored in a sanitary condition.

4. Pest activity
Pest control program is in place on a weekly basis.

5. Administrative
Permit posted at the front.
FOODSAFE level 1 certified staff on duty (expires April 1, 2024).
