Facility is currently not open to the public. Facility is undergoing staff training.

Observations:
- General sanitation is good.
- Breading cooler observed functioning and measured at 3C
- Hand washing stations (including at back prep area) observed unobstructed and supplied with hot and cold running water, liquid soap and paper towel.
- Preparation table (mobile and stainless steel) observed available for produce preparation. Reminded staff to prepare produce away from raw meat.
- Manual temperature records maintained for all coolers and hot holding units until smartsense system has been installed. Continue using manual temperature check system until system has been installed.
- Probe thermometers available for checking internal temperature of food.
