Observation (CORRECTED DURING INSPECTION): Damp wiping cloths were found sitting on counter tops in the deli department.
Corrective Action(s): Even though wiping cloths are change every 2 hours, store wiping cloths in sanitizing solution. Change solution and cloths in buckets after 2 hours.

Observation: UV lights installed in the Deli and Meat Departments. However, front doors and side doors are kept open allowing entrance of pests.
Corrective Action(s): Find a solution to reduce the number of flies entering the store (i.e. air curtain, etc.).

Comments

Health permit posted in prominent location.
Hand sinks provided with liquid soap and paper towels.
Walk-in cooler (meat storage) was at 1 deg C.
Display coolers and prep line coolers registered at or below 4 deg C.
Hot holding for soup and pulled pork was at hotter than 70 deg C.
Temperature log was available and up to date. Ensure to include the side freezer beside the meat department.
Operator is ensuring staff have current Food Safe 1 certification.
All Food Safe 1 taken before July of 2013 will expire on July 29, 2018.
Staff hygiene was good - clean uniforms and hair restraints.
Sanitizer (quats) measured 200 ppm (spray bottle and 3 comp sink).
Bleach (at 100 ppm) used for meat department.
General sanitation was satisfactory at time of inspection.
