Observation (CORRECTED DURING INSPECTION): Door frame of undercounter preparation cooler was dirty.
Corrective Action(s): Door frame of undercounter preparation cooler shall be cleaned regularly to prevent build up of grime. Operator started cleaning at time of inspection.

Comments

General observations:
Coolers were 4 degrees Celsius or less.
Freezers were less than -18 degrees Celsius
Hot holding units were over 60 degrees Celsius.
Food storage practices were good.
Organization of storage areas was satisfactory.
Hand sinks stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
General sanitation (except as noted above) was satisfactory.
Chemicals were stored in a safe manner.
High temperature dishwasher had a final rinse temperature of at least 71.4 degrees Celsius.
No signs of pests.
Premise has been serviced monthly by a licensed pest control company and the technician's reports indicate no rodent activity since August 2018.
Discussed with operator that he may consider reducing the frequency of pest control service to once every two months but to retain regular servicing to assist in monitoring.

Note
Deep fryer no longer in use.
Dining area of premise has been modified to include booth seating. Dining area can now accommodate 24-30 customers.
