Observation: 1. Cajun spices in plastic bag inside open small cardboard box
2. Open sack of rice with scooper in product on shelf in dry storage room
3. Basmati/Beans/Lentils bin (no lid) in dry storage room
Corrective Action(s): Ensure all foods will be store off the ground, covered (with secure lid) in a pest proof container.
-Any container or package that can not be sealed must be re-located into a container meeting the requirements above.
-All open packages and bags must be relocated

Observation: High level of mouse activity (droppings) noted around lower shelves in prep area of back kitchen and front bar.
Corrective Action(s): Ensure droppings are cleaned up regularly, documented and areas monitored for current activity. Report all sightings and activity to pest control
**Atlas PC is new pest control company.

Observation: 1.Open packages of rice and beans left on shelves in dry storage room
2. Renovations in progress at front dining area - large gaps noted to outside under and around boards enclosing open construction.
3. Large gap under dry storage door
Corrective Action(s): 1.Ensure all food sources are properly stored and secured in pest proof container with a fitted lid to prevent feeding / attracting pests.
Correction date: 3 days
2./3. Large gaps and spaces need to be sealed to prevent pest entry - as this is difficult with open construction it will be key to keep on top of current pest levels and activity through traps and pest proofing all food storage areas.

Observation: Water at mid handsink in kitchen (next to standing freezer) is too hot to wash hands.
