Corrective Action(s): To prevent microbial growth cooked potentially hazardous foods must be kept hot at 60 C or warmer.

Chef adjusted temperature controls for left kitchen warmer case and cutting station display to hotter temperature.
Perforated empty inserts adjacent to custard display replaced with solid metal inserts to retain heat within warmer unit.
Fried chicken loaded into a deeper food insert tray to increase temperature.

Observation: Kitchen handsink is missing a papertowel dispenser.
Staff washroom papertowel dispenser is damaged.
Dishwashing station papertowel dispenser is empty.
Corrective Action(s): Hand-washing stations must be equipped with a stocked liquid soap dispenser, warm water and single use hand drying towels from a dispenser.
Repair, replace papertowel dispensers as necessary to allow staff access to proper handwashing facilities.
