Routine check:
Coolers are at (4 C or colder).
Temperature records for fridges are being kept - good!
Hot holding for refried beans, green salsa, red salsa, chocolate salsa (mole) are all at 60 C or hotter - good.
Reviewed cooling procedures - use a cold/ice water bath to cool large volumes prior to placing in smaller containers in the cooler.
Reheating of food is done on the stove prior to hot holding.
Chlorine sanitizer is at 100ppm in labelled spray bottle.
Dishwasher has a chlorine sanitizing rinse (50ppm minimum required).
