Freezers functional
Meat processing / packaging area measured 9 to 10 degrees C at time of inspection.
It was stated that meats are kept in processing / packaging area for short periods of time (less than 30 minutes).
Raw and ready to eat foods stored separately / raw foods not stored above ready to eat foods.
Ice machine and bin in clean condition.
Discussed procedures for cleaning and sanitizing equipment. No concerns.
Hot and cold running water, liquid hand soap, and single use paper towels available for hand washing.
Three compartment sink supplied with hot and cold running water.
Quaternary ammonium compounds (quats) sanitizer available at 200 ppm from dispenser at 3-compartment sink and in labeled spray bottle
Temperature and sanitation logs maintained
Shellfish tags on site. Tags are kept for a minimum of 90 days.
No signs of pest activity observed at time of inspection.
