Comments

- Hand sinks were unobstructed and properly supplied with hot and cold running water, and liquid soap, and paper towels. Hand sink in poultry cooler was also properly supplied.
- Quats sanitizer solution available at 200 ppm from dispenser and in spray bottle. Test strips available for monitoring.
- Three compartment sink maintained in sanitary condition.
- All coolers were measured at 4C or colder.
- Freezers were measured at -18C or colder
- Hot holding unit for samosas and jamaican patties measured at 60C or hotter - good. Deli assistant manager stated items are only held for 2 hours.
- Hot holding unit for rotisserie chickens measured to be at 70C. Chickens are held for 3 hours.
- Food storage practices satisfactory; all food stored off the floor and properly covered
- Meat slicers had been in use and were not cleaned/sanitized yet. *Ensure meat slicers are sanitized every 4 hours at a minimum.
- Temperature records well maintained and up to date
- Accurate thermometers available
- No signs of pest activity noted at time of inspection, pest control in place.
