Observation (CORRECTED DURING INSPECTION): Wet wiping cloths stored on counter top. Cloths are washed only at end of day noted by staff on site. Spray bottle of chlorine sanitizer @ > 200 ppm.
-ensure wet wiping cloths are stored in bucket of sanitizer solution in between uses. Wet wiping cloths are a breeding ground for bacteria and can contaminate food contact surfaces.
