Observation (CORRECTED DURING INSPECTION): Sandwiches and wraps within Bread Garden cooler observed at temperatures higher than 4C - probed with thermometer and found to have an internal temperature of 8C for breakfast wrap. This is a potentially hazardous food that is capable of pathogen growth when temperatures are above 4C for longer that 2 hours. Since temperature of the unit was recorded in early AM (6 or 7) and found to be 0C it was not certain how long the temperature of the food items were held above 4C. For cautionary purposes, the operator voluntarily PHF in the garbage (this was observed) adn reason for doing so was explained by inspector.

Observation: Bread Garden deli cooler unit not capable of reaching 4C or less, which is required.

Corrective Action: Until cooler unit is repaired/proven to reach temperatures of 4C or less and maintain, a separate cooler unit must be used to store cold, potentially hazardous foods.

Comments

- Handsinks supplied with hot and cold running water, soap + paper towel
* Bleach is used for sanitizer. Tested with strips and read 200ppm+ (bleached the paper). Only 1/2 tsp of bleach is required for the sanitizer bottles to achieve effective sanitation.
- No signs of pests.
- Remaining coolers at 4C or less and all freezers/ice coolers at -18C or less.
* Note: To prevent cross-contamination, please place ice scoop in a separate container when not in use.(back room ice machine)
- Sanitation is Ok.
- Food storage only storing food items and items were 6 inches off the floor. Expired items routinely checked for by staff.
