Observation (CORRECTED DURING INSPECTION): Spray battles with Chlorine sanitizer are not labeled at the time of inspection.

Comments

General sanitation is satisfactory.
All handwashing sinks (front & kitchen) supplied with hot and cold running water, soap and paper towel in wall-mounted dispensers.
Walk-in cooler at 3.0 C.
Pizza prep.cooler at 1.0 C.
Prep. cooler at 4.0 C.
Front display cooler with sweets and beverages - satisfactory; however, required adjusment.
Walk-in freezer at -28 C.
Front food display - good (covered and in the display case and box).
Thermometers for cold units - available.
Note: High temperature dishwasher is not in use at the time of inspection. Ensure it > but not less then 71 C.
Sanitizer solution available in spray bottle and it at 100 ppm of Chlorine concentration.
Food storage practices are satisfactory in dry storage area.
No evidence of pest activity at the time of inspection;
Washroom - clean & fully supplied.

Recommendation:
- Cover all food in coolers as soon as it cooled < = 4.0 C.
- Keep all food items off the floor.
