Observation (CORRECTED DURING INSPECTION): 1) Paper towel dispenser for hand washing station near the dishwashing area was not working properly at start of inspection.
2) No paper towels were available for hand washing stations at the kitchen entrance or at the bar.
Corrective Action(s): 1) Ensure dispensers are working properly.
2) Ensure all designated hand washing stations are properly supplied with paper towels and liquid soap.
Corrected at time of inspection.

Observation: An opened can of tomatoes was stored in a prep cooler.
Corrective Action(s): Once tin cans have been opened, the inner lining may oxidize (especially with acidic foods) and metals from the tin may leach into the food. Contents of opened tin cans must be transferred to and stored in a food-grade container/insert.
Correct by: Immediately.

Comments

- Routine inspection conducted.
- Hand washing station by the pizza oven area was properly supplied with hot/cold running water, liquid soap, and paper towels. *Ensure to check supplies for all designated hand washing stations daily (see violation code 401 above).
- QUAT-based sanitizer solution available from dispenser and in designated spray bottles at 200 ppm. Good.
- High-temperature dishwasher reached 72C at the dish surface during final rinse cycle. Good - minimum of 71C at the dish surface required.
- Sinks in dishwashing area maintained in sanitary conditions.
- Food preparation sinks also maintained in sanitary conditions.
- All coolers were maintaining temperatures at 4C or colder. Note: 2 prep coolers by pizza oven are not in use for cold-holding - OK.
- All freezers were maintaining temperatures at -18C or colder.
- Hot-held beans measured above 60C.
- Daily temperature logs for coolers and freezers maintained. *Recommend also keeping temperature records for hot-held food items.
- Good food storage practices noted. All food stored off the floor, properly covered and protected from contamination, with good separation between raw and ready-to-eat food items/vegetables.
- General sanitation excellent at time of inspection. *Note: ventilation canopy requires cleaning soon and requires more frequent cleaning.
- Dry storage and mop sink area maintained in sanitary conditions.
- No signs of pest activity noted at time of inspection.
