Observation (CORRECTED DURING INSPECTION): Found dishwasher to 0 ppm chlorine on the final rinse. No test strips available at time of inspection.
Corrective Action(s): Ensure all staff are aware how to check chlorine levels, as they need to be checked daily.
Ensure all staff know how to chain dishwasher chemicals and how to prime the lines to ensure there is no air bubbles in the line after changing chemicals.
This is a repeat offense.
After priming found final rinse to be 50 ppm.

Observation: Found food and grease build up on in hard to reach areas on the floor (i.e. under 2 compartment sink), shelving and equipment surfaces (i.e. slushy/juice machines, fronts of dishwasher and coolers).
Corrective Action(s): A deep and thorough cleaning is required through out the premises including the floors, counters, shelves, and any equipment that requires it

Observation: Display cooler was holding food at 7 C
Corrective Action(s): Coolers must be able to maintain foods at or below 4 C.
Keep minimal potentially hazardous foods inside, (i.e. what can be sold in under 2 hours) and replace as needed.
Plastic and cardboard are not great for transferring temperatures, metal trays may help with keeping foods cold.
Make sure to limit the use of trays and cardboard boxes in the coolers as they prevent the flow of air which is required to keep the foods cold.
