Observation:
The light bulbs in the kitchen and front food prep area have no light covers on them. Glass can fall into food if the bulb breaks.
Corrective Action(s):
Install light covers on the light fixtures or install clear plastic tubes over the bulbs.

Observation:
The exhaust canopy over the oven, has accumulated grease and dust on the interior surface of the stack. This is a fire hazard, and dust could fall onto food.
Corrective Action(s):
Have the exhaust canopy professionally cleaned. Ensure to do this on a regular basis, and keep staff cleaning the accessible surfaces inbetween professional cleaning.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; hot holding units 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had rinse cycle temp of 71C at the plate's surface, as per max/min thermometer.
- Bleach sanitizer in spray bottles and cloth buckets was between 100-200ppm. Ensure to change the cloth bucket solution every 2-3 hours, and use test strips to ensure the concentration is correct.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- FoodSafe certified staff present.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- All surfaces and equipment are in good working order; durable; smooth; sealed; and cleanable.
- COVID-19 Safety Plan present and measures in place.
- Discussed results of the inspection with the owner, no signature obtained due to the pandemic.
