- Food debris accumulation under sink (beside kitchen chest freezer).
- Food debris and dirt accumulation under prep counters and equipment.
Corrective Action(s): - Thoroughly clean above noted areas and all other surfaces and hard to reach areas.

Comments

- Handsinks are accessible and provided with hot and cold water, liquid soap and papertowels.
- Washroom sinks are provided with hot and cold water, liquid soap and papertowels.
- Kimchi preparation and fermentation process reviewed with operator. Operator states that same batch recipe is used.

- Cold Holding Equipment are maintaining acceptable temperatures (≤4C).
- Freezers (chest freezer and upright double door freezer) are maintaining acceptable temperatures (≤-18C).
- Rice Hot Holding (x2): >70C
- Rice scoop is stored in ice water between uses.
- Interior of ice machine appears maintained in a sanitary condition. Ice scoop is stored in a container outside of ice machine.
- Wiping cloths stored in 100-200 ppm chlorine bleach sanitizer between uses.
- Low Temperature Sanitizing Dishwasher: 50 ppm chlorine residual
- No pest activity observed at time of inspection. Glueboards and snap traps are empty.
- Monthly pest control services provided by a pest control management company.
- Most recent pest control service report (dated 13-Feb-2024) reviewed.
**Follow pest control technician's recommendations to ensure that sides of equipment are regularly cleaned to minimize potential pest attraction.
- Continue to monitor for pest activity. Report new and/ or increased activity to your pest control service technician.
- Ensure all areas of the premises are accessible for pest control service.
- General sanitation (unless otherwise mentioned) appears to have improved since the last inspection.
- Mop sink has been reconnected and is in use for sanitation purposes.
- FOODSAFE Level 1 requirements are in compliance. Operator and employees present have valid FOODSAFE Level 1 certificates. (Expiry May 2028).
