Observation (CORRECTED DURING INSPECTION): Bucket of bean sprouts stored out at room temperature in a bucket.
Corrective Action(s): Bean sprouts are a potentially hazardous food and must be kept cold. Either keep these in the cooler or keep them topped up with a lot of ice to keep them cold. Put these in the cooler when it is not busy.

Observation: Buildup of grease on mechanical ventillation hood, between grill equipment and under mop sink. Buildup of dust on ceiling in kitchen.
Corrective Action(s): Owner stated that he has already called in a company for the mechanical ventillation but they have delayed due to insufficient staff. Clean all other areas noted above. Due: 1 week.

Observation: Multiple "Home Depot" and "Rona" buckets in use for sauces and other food items. All food containers must be food grade.
Corrective Action(s): Change out buckets for food grade containers. Some buckets changed out during inspection but not enough food grade buckets on site to replace all the required ones. Purchase/obtain more food grade buckets and swich out for the Home Depot and Rona ones. Due: 1 week.

Note: While no prepared sanitizer was available at start of inspection, reviewed sanitizing procedures and no concerns with process. **Keep a prepared sanitizer solution available during operation to encourage staff to use it regularly and to disinfect cloths.

Other observations:

Cooling reviewed. Reminder that hot foods once they cool to 60C, have 2 hours to get to room temperature then 4 hours to get to 4C or less.
√ Food up off floor ≥6”, ready to eat foods stored above raw foods
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Low temperature dishwasher at 50ppm
√ Daily cleaning and maintenance is satisfactory
