Observation (CORRECTED DURING INSPECTION): 1) Food items stored in prep cooler had internal temperatures of ~9-10C.
2) Cut vegetables stored in containers on top of prep cooler out at room temperature again.
Corrective Action(s): 1) All food in prep cooler was either discarded or transferred to a working cooler.
2) Cook stated cut vegetables are only kept at room temperature for 2 hours. **Keep all containers of cut vegetables in ice bath on counter, otherwise they must be stored inside a cooler at 4C or below at all times.

Observation (CORRECTED DURING INSPECTION): No bleach sanitizer solution was available for the kitchen. Bleach sanitizer solution in spray bottle for front server area had 0 ppm chlorine detected.
Corrective Action(s): Staff made fresh solution of bleach sanitizer in spray bottle and in bucket for kitchen at time of inspection; 100 ppm chlorine detected in both solutions.
**Bleach solution in the spray bottle must be changed at least once a week.
**Bleach solution in bucket for storing wiping cloths must be prepared at the start of each day, and changed every 4 hours at a minimum.
**Repeat violation. Future non-compliance will result in further enforcement actions.

Observation (CORRECTED DURING INSPECTION): Scoops were being stored directly in dry ingredients in dry ingredient bins.
Corrective Action(s): Discontinue this practice. Wash and sanitize scoops after each use, and store in a clean place. Only use scoops as needed.

Corrective Action(s): Repair prep cooler so it is capable of maintaining temperatures of 4C or below. All food moved to a properly working cooler at time of inspection; do not store any food in this cooler until it has been repaired and an inspection has been conducted.

- Freezer temperatures were satisfactory
- Soups hot held at above 60C
- No signs of pest activity noted at time of inspection
- Steam tables not in use at time of inspection
- All food stored in coolers and freezers were covered. Good.

**Hot water tank area requires cleaning and reorganizing.
