Routine Inspection

Coolers (except vegetable display cooler in sushi bar and inserts on prep line) at 4 C or below.
Vegetable display cooler only used to hold cut vegetables for a maximum of 2 hours.
Walk-in freezers at -12 C. Under counter freezer at -8 C. Ensure freezers are able to maintain a temperature of -18 C or below.
Hot holding at 60 C or above.
*Ensure black sushi rice is stored in the cooler.
Hand washing sink equipped with hot and cold running water, liquid soap and single use towels. Ensure designated hand sinks are used for handwashing.
High temperature dishwasher registered at 78 C during final rinse (minimum required is 71 C).
Surface sanitizer (bleach) in bucket with wiping cloth stored inside registered over 200 ppm. Operator made a fresh solution at 200 ppm for chlorine.
***Lemon-quat sanitizer used for sanitizing tables. Label does not indicate it can be used for food contact surfaces (only provides instructions for non-food contact surfaces). Confirm with manufacturer this can be used for food contact surfaces such as dining tables or use another approved sanitizer (unscented household bleach at 100-200 ppm or regular Quats).
