Observation: The ice machine has mould buildup inside.
Corrective Action(s): Clean today and ensure that it is cleaned on a regular basis.

Observation (CORRECTED DURING INSPECTION): The main kitchen hand washing sink had several pans stored inside of it and was not accessible to staff.
Corrective Action(s): Pans moved during the inspection. Do not store anything inside of this sink.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Staff at the sushi bar were not washing their hands properly. They were observed to rinse their hands with water for several seconds without using soap.
Corrective Action(s): Staff educated on hand washing during the inspection.

Observation: 1) Food is stored directly on the floor in the walk-in cooler
2) A bag of flour was stored directly on the floor in the hallway
Corrective Action(s): 1) Move all foods off of the floor (30 cm minimum)
2) Since this is a repeat violation, this will be discussed with the owner during the follow up inspection.

Observation: Mouse droppings found in the dry storage room. Pest control is onsite regularly, reports reviewed during the inspection.
Corrective Action(s): Clean all droppings with a bleach solution. Follow up in one week.

Observation: 1) Dust buildup observed on the kitchen walls.
2) Cleaning needed to remove food debris buildup under the cook line and equipment in the kitchen.

Observation: The glasswasher was leaking and had 0 ppm chlorine when tested. Staff informed the EHO that it has not been used for several weeks and that they are waiting for a part for repairs.
Corrective Action(s): Fix within one week and ensure that it has 50-100 ppm chlorine.

Comments

-Temperature and dishwasher records are not being maintained. The most recent date is November, 2023.
-Ensure that the raw oyster advisory is included on the menu. Add the following wording for the advisory:

“The consumption of RAW oysters poses an increased risk of foodborne illness. A cooking step is needed to eliminate potential bacterial or viral contamination.”

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher had 50 ppm chlorine.
