Observation: 1. Build up of food debris noted in the floor drains in front of the meat section cooler, dairy/eggs walk-in cooler and other floor drains.
2 Dirt build up noticed under the vent grates in some island display coolers and freezers.
Corrective Action(s): 1. Clean all floor drains thoroughly by using a drain foamer if needed. The floor drain checking and cleaning must be included in
store's weekly sanitation checklists ( By August 30, 2018).
2. Clean under the ventilation grates for all coolers or freezers that require cleaning. Checking and cleaning these areas must be on a biweekly or monthly cleaning log. Recommended checking all coolers/freezers and cleaning them one by one as needed to eliminate dirt build up.

* Ensure all cut, peeled, sliced & diced vegetables are always stored under refrigeration ( corrected during the inspection).
* Recommended scheduled maintenance to remove moisture build up from the light fixtures in walk-in coolers.

* Recommended placing physical barriers between any raw meats/seafood and mayonnaise jars.
Meat grinder is stored in the walk-in cooler in between uses. The grinder is thoroughly cleaned
and sanitized at the end of every day by taking it apart.
