Routine Inspection
-Hand washing sinks equipped with hot and cold running water, liquid soap and single-use towels.
-Coolers at 4 C or below except sweets cooler which was recently unplugged (ensure it reaches 4 C or below before stocking it with potentially hazardous foods).
-Freezers at -18 C or below.
-Hot holding above 60 C. Discussed reheating methods.
-Discussed cooling methods. Recommend using cooling wands to ensure temperature goes from 60 C to 20 C in 2 hours and 20 C to 4 C in 4 hours.
-Low temperature dishwasher registered 100 ppm chlorine on plate surface during final rinse.
-Surface sanitizer available in buckets with cloths stored inside - registered 200 ppm chlorine.
-Ceiling has been cleaned.

Action Items:
Temperature logs are not maintained for coolers (in kitchen), cooking and reheating. Please verify and document.
Ensure cook temperature of chicken and other meats is verified (must reach internal temperature of 74 C/165 F) and documented.

Operator's FOODSAFE Level 1 expired April 20, 2025 - please renew it by Aug 18, 2025.
