Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Buttermilk observed to be stored at room temperature throughout inspection. Milk measured to be 19°C. Staff stated buttermilk is left out during baking, which can take up to 2 hours. Leftover milk is returned to cooler and potentially reused multiple times.
Correction: Immediately revise procedures to:
1. Return buttermilk to cooler when not in use (take milk jug out for each portioning of milk for product and return to cooler), or
2. Portion out required quantity of buttermilk (as per recipe(s)) into a container, and return butter milk to cooler.

Follow-up complaint conducted in response to Report #TCHN-BZEMHC

Owner has retrained staff to portion out buttermilk in cooler and to take only what is necessary for recipe out.
Facility has been cleaned; facility scheduled to be cleaned daily by staff. Additional cleaners contracted to perform deep clean weekly.

Discussed and clarified food safety / sanitation plan requirements for mobile truck.
